Sayur Lodeh Betawi

Ingredients
- Tempeh & Tofu (cut by 1cmx1cm)
- Beans (can use eggplant, long beans, bamboo shoots, etc)
- 1cm Galangal (cut by 3)
- 1 Lemon Grass (cut by 3)
- 3 Lime Leaves
- 600 ml Coconut Milk
- 2 Chopped Red Chili
- Prawns (optional)
Spice Paste
- 1tsp Dried Shrimp Paste
- 1tbsp Turmeric Powder
- 3 Shallots
- 2 Garlic
- 2tsp Coriander
- 3 Candlenuts
- Salt and Sugar (to taste)
Methods
- Stir-fry spice paste with hot oil.
- Add galangal, lemon grass and lime leaves. Saute until fragrant.
- Add the vegetables, tempeh, tofu and prawns. Stir until all the spices absorbed.
- Pour the coconut milk, bring to a boil while stirring.
- Serve with warm rice.

Bahan
- Tempe & Tahu (potong kotak-kotak)
- Buncis (bisa pakai terong, kacang panjang, rebung, etc)
- 1cm Lengkuas / Laos (bagi 3)
- 1 Serai (potong bagi 3)
- 3 Daun Jeruk Purut
- 600 ml Santan Kaleng
- 2 Lombok Merah (potong 1 cm2)
- Udang (optional)
Bumbu Halus
- 1sdt Terasi
- 1sdm Kunyit Bubuk
- 3 Bawang Merah
- 2 Bawang Putih
- 2sdt Ketumbar
- 3 Kemiri
- Garam dan Gula (sesuai selera)
Cara Membuat
- Tumis bumbu halus dengan minyak panas.
- Masukkan laos, serai dan daun jeruk. Tumis sampai harum.
- Masukkan sayuran, tempe, tahu dan udang. Aduk sampai rata.
- Tuang santan, didihkan sebentar sambil diaduk.
- Hidangkan dengan nasi hangat.
